Aunt Binyamina’s apple latkes

Mix 2 eggs and 1 ½ cups plain yogurt.  Combine separately 2 cups unbleached flour, 1 teaspoon baking powder, ½ cup sugar, and three tart apples, peeled and grated.  Add egg/yogurt mixture.  Heat butter in a pan and cook the batter in one-tablespoon latkes.  Cook until lightly browned, turn and finish.  Serve immediately or place in the oven to keep warm until you’re ready to eat them.
