Uncle Gavriel’s Moroccan Cigares

Mix 3 cups ground blanched almonds with 1 ½ cup sugar, an egg, 1 tablespoon orange blossom water or orange juice, and a tablespoon of lemon zest.  Place a teaspoon of the mixture in a line down the middle of a half of a wonton wrapper and roll tightly, moistening the edge and the ends to seal.  Fry in canola oil, turning them frequently until they are lightly brown on all sides.  Drain on paper towels.  Meanwhile, boil 1 cup sugar and ½ cup water. When the sugar is fully dissolved, add 3 tablespoons honey.  Let cool to 240 degrees without stirring.  Dip the cigares, drain extra syrup, and serve.
